Handmade Cadiz Bread in the shape of a piglet


Pan de Cádiz is a traditional handmade sweet made up of several layers of marzipan and nougat, with hand-cut glazed fruit, egg yolk and sweet potato.

All this is layered and covered with another layer of marzipan decorated by our workers, each one according to their own taste. Afterwards, they are generally painted with egg yolk, although the most industrial ones do not do this.

In this case they imitate the shape of a little marzipan pig, ideal for the little ones in the house. They are handmade because each one is unique.

Once they are baked and dry, they are hand-made one by one, and they are closed with a brush and glue. A very manual work. We only make a couple of dozen a year in the shape of a little pig.

Bread or nougat from Cádiz is one of our star products that we have been making since the beginning, in the first half of the 19th century.

As it is so handmade, each loaf is unique, and in this case they are decorated in the shape of little pigs to please the youngest members of the family. Each one is different.

It is a laborious job that only the women in the factory know how to do. Some fill them and the specialists cover them, close them and decorate them as they wish. In the past, thimbles, scissors, knives and some creative inventions of the workers were used for this work.

Here is a video of the making of the base of the bread of Cádiz, specifically, the Yolk: Normally they are served individually or in boxes of 5 kg. We also have 250 grammes, 1 Kg and even our customers who sell them by weight or by the slice ask us for 4 Kg and 6 Kg.

Origin of Cadiz bread

Let's talk a bit about history. The origin of Cádiz bread dates back to the 19th century. At that time, the French invasion left Cádiz under siege and the population was forced to use all the almonds stored in customs for the overseas colonies as a product which, if well prepared, could replace traditional bread.

This form was later sweetened and gradually came to be known as 'mazapán de Cádiz' (marzipan from Cádiz) because of its origin. This recipe has been preserved and used up to the present day.

Nowadays we make the recipe as traditional and artisan as possible. Many large factories have automated and industrialised this process, but we prefer the traditional way.

Ingredients:

Marzipan: Almond (60%), sugar, water, stabilizer E(-420) and preservative (E-200). Fillings: (sweet potato (50%), sugar, glucose syrup and preservative E-200), (egg yolk (50%), sugar, glucose syrup, preservative E-200 and emulsifier E-466), (pumpkin fruit, sugar, glucose and fructose syrup, preservative E-202, acidity regulator E-330 and colourings E-120, E-100 and E-142), cinnamon, wafer: potato starch (99%), high oleic sunflower oil (sunflower oil and antioxidants: E304, E310 and vitamin E). Painted with whole egg. May contain traces of wheat, sulphites.
