What is a nougat?


Nougat, or turron nougat, is a French sweet very similar to turrón, made from almonds, honey and egg whites. Its texture and flavour, although different, are quite similar to the Alicante turron or hard turrón.

How does a nougat differ from a turrón?


The main difference between nougat and turron is that nougat is of French origin, usually has honey instead of sugar, and does not have the seal of approval of the regulatory council of turron. Nougat, on the other hand, is of Jijonenco origin, and is protected by the regulatory council of Jijona turron.



What is Spanish turron and where can you buy it?

The Spanish turron is the most typical traditional sweet of Spain, whose origin is in Jijona, a town of just 7,000 inhabitants, in the province of Alicante. Its ingredients, in the form of dough, are toasted almonds, honey, sugar and egg white. Its first formulas date back centuries, so that already in the fifteenth century there are books that cite the existence of nougat on the tables of the main Kings of Spain.

However, it must be stressed that Spanish turron is not the same as nougat. In other words, there is no such thing as Spanish nougat, but rather it is called turrón.

Types of Spanish turron


The best known turrones made in Spain are soft and hard nougat. Both have the same ingredients (well, the hard one also has wafer), but the elaboration process is a little different. They are called soft or Jijona turron and hard or Alicante turron, as we will see below.

A few decades ago this type of nougat made in Jijona was protected by the European Union, so that the soft nougat that meets the quality requirements in the raw material and the process of production craftsmanship is called Turrón de Jijona, while the hard nougat is called Turrón de Alicante, which as we all know, are regions of the Valencian Community. Therefore, there is what is called the IGP, Protected Geographical Indication, so if you want to buy these typical and protected nougat, you have to look for the seal of the Regulatory Council of Jijona, Alicante.

There are other substitute nougats, known as "turrones de obrador". For example, with the yolk left over from the preparation of these two nougats was created the yolk nougat or yema tostada. And when making marzipan for pastel de gloria, pan de cádiz, etc., nougat was also made from snow, coconut, etc. Strange flavours such as strawberry, banana, etc. are not usually made in Xixona and some consider them an aberration because the classics are hard and soft, with the right percentage of almonds.
